Pan-tastic!

My dear MIL gave me this terrific pan for making Danish Ebelskiver, little filled pancakes. Have you ever tried them? They are simply wonderful, crispy on the outside and light, sweet and delicious on the inside. They cook up quickly, only a few minutes on each side and they're done. I made my first batch last night. I used strawberry preserves for the filling, they were good, but I'm going to do some experimenting and try putting in a sweetened cream cheese next. One of the suggested fillings is chocolate hazelnut spread, but I'm not a big fan of the noisette; I think that plain chocolate would be great, however. What about cinnamon spiced apples; or how about cooked cherries or blueberries? The possibilities keeping pop-pop-popping like popcorn kernels in my head.

  2. Candice's family comes from Denmark and she has made these for our family since I can remember, mostly at Christmas time however. She recently posted this video on FB about making aebleskivers:

    They had just visited Solvang, CA, which is a dedicated Scandinavian community and she had them while she was there.

    And now after all this talk of aebleskivers, I need to go eat breakfast! :-)

  12. I've made aebleskivers for over 50 years. It was a favorite treat for my boys who had contests who could eat the most. I could keep four pans going at once. We like them best with raspberry syrup. My recipe calls for buttermilk and egg whites folded in at the last.

  15. I grew up very near the little town of Solvang - aeblskiver are a big thing there. Never had them with filling - they are served plain but with a fruit topping. Delicious!
